After beginning his career at the luxurious Bar IL Portico, Porto Cervo in his native Italy, Giovanni Spezziaga has, for the last 15 years been perfecting cocktails and fine-tuning some of London’s most very splendid nightspots.He’s worked at the award winning One Aldwych, launched the Arch London Hotel’s bar, Hunter468. He’s been the bar manager at Michelin starred restaurant Benares in Mayfair and more recently made Scarfes Bar the Holborn cocktail destination.

 

Giovanni latest adventure is a role as General Manager at the spectacular Coral Room at the Bloomsbury hotel. We caught up with him to find out more…

 

 

Have you seen any new trends with regards the type of cocktails people are ordering these days? Are we becoming more sophisticated?

 

Sustainability is perhaps the most important cocktail trend of 2018, because it’s literally about saving the world. The cocktail market, it never stops; once you believe you are catching up there is something new coming up. The challenge is to make your own style and engage with the guests. We are focused on exceeding guest expectations through our service and choices. It is not just about drinking a cocktail anymore; it’s about an experience. So all the touch points of service standards, product, space, and entertainment have to be ticked.

 

Is there a typical ‘coral room’ clientele? If not what kind of people visit?

 

The Coral Room provides the perfect setting during the day for guests wishing to meet for breakfast, coffee or a light bite, transforming itself into a lively cocktail bar with occasional live music sets in the evenings which attract a young and fashionable crowd.

 

 

What is the best night of the week to visit The Coral Room?

 

Thursday night as it brings a great mix of locals and regulars from Dalloway Terrace.

 

The Coral Room is also a great place to try English wines, how do you think they have developed over the past 5 years and what is your favourite ?

 

The Coral Room’s mission is to highlight the quality and value of English fizz. The bar is dedicated togiving London an ideal location in order to experience and appreciate ‘English Sparkling Wine’. We have a total of 29 different English Sparkling Wines to choose from with well-known loved brands to include Bolney Estate, Exton Park Vineyard and Greyfriars etc. For me it’s probably Bloomsbury’ Cuvée 2014 from RIDGEVIEW wine estate, I like the texture and the sophisticated bubbles. It is refreshing with an elegant fruity aroma. Our aim is to educate people and for them to enjoy an amazing experience at The Coral Room.

 

 

What is your fav Italian Italian Wine?

 How does it feel to be the manager of such an iconic location in London?

 

I feel honoured to work at The Bloomsbury, it’s an inspirational place where so many stories are created. From the first party at the Dalloway Terrace to the celebrations for the opening of The Coral Room, every day is different for the team and our guests.

 

 

There’s a certain pride attached to working in a building that is such an iconic landmark to the city. Being able to look out across the area inspires creativity every day and the setting provides a fantastic pull for our guests.

 

I love nibbles and Aperitivos, do you have a perfect combination of cocktail and small plate(s) at the Coral Room?

 

Bloomer Welsh Rarebit and our house Negroni does the job for me.

 

If you could sum up the Coral Room in one or 2 words how would you do it?

 

Refined and Funky.

There are many reasons why we love a bit of Scarfe’s Bar action. And cosying up with a well made Daiquiri is just one of them. The room itself is a big hit in our book too – not only because it’s grown up and elegant without being stuffy or remotely intimidating; we love the fact that despite its five-star credentials there’s an ever present playfulness about the place. Where else can you find a permanent as well as a changing gallery of bright, beautiful and whimsical, one-off paintings by Gerald Scarfe? Where else can you find a bar named in honour of this great British artist and caricaturist?

Scarfe’s Bar speaks in just the right tone to everyone, whether you’re all dressed up and ready for a night on the town or in more of a reclusive mode, just wanting to kick back in one of the many comfy chairs with your nose in a good book and your hands curled around a great drink.

Giovanni Spezziga and his team haven’t let their exacting standards slip for National Daiquiri Day. Here Spezziga tells us why the Daiquiri is such an iconic drink and why you should be celebrating National Daiquiri Day in his bar on 19th July.

Giovanni, can you share your thoughts on the Daiquiri?

It’s the perfect summer cocktail – it’s simple, elegant, and refreshing. In my opinion, the Daiquiri is up there with the Martini, the Manhattan, and a select handful of others – in the pantheon of drinks that perfectly reflect the spirit and character of their base liquors without introducing needless complexity or requiring excessive preparation.

How do you define the drink?

The Daiquiri is one of the most important classic cocktails as it really demonstrates the perfect balance between sweet and sour. It can be served both frozen and on the rocks, depending on the time of year and weather. I prefer a classic Daiquiri but you can also combine it with different fresh fruit flavours that complement the base liquor.

What does the taste of the Daiquiri conjure up for you?

With the first sip of a Daiquiri, you are transported to the warm, white-sand beaches of the Caribbean. I think of Cuba right away which is the birthplace of the Daiquiri.

Do you remember the first Daiquiri you tasted and if so, do you remember what it was like?

It was back in the 1990s on the beautiful island of Sardinia, it was the perfect cocktail to enjoy on the beach.

How do you prefer yours?

60ml Bacardí Carta Blanca, 25ml freshly squeezed lime juice, 15ml sugar syrup.

In your opinion, why is it such a classic cocktail?

The venerable Daiquiri is more than 100 years old and has stood the test of time.

Where would you most like to enjoy one?

Well I can make a great Daiquiri so I guess I would say at my ‘casa’ Scarfes Bar!

Tell us about the Daiquiri you’ll be serving for National Daiquiri Day?

It’s difficult to improve on perfection, but I recommend using a bottle of 1950’s Bacardí Superior, freshly squeezed lime juice and sugar syrup – this keeps the spirit of the original while adding a new refreshing spiciness.

How does Bacardí 44.5% Heritage elevate the taste and depth of your Daiquiri?

Heritage Blend adds more flavour of muscovado sugar as well as more body and crispness to the drink.

Why should cocktail lovers raise their glasses to National Daiquiri Day in your bar?

A few month ago, I popped into the Rum Shack, a local tiki bar in Nassau, Bahamas while I was visiting the new Rosewood at Baha Mar which will be opening this autumn. I ordered a Daiquiri to celebrate my time there. After a few Daiquiris, I told the bartender that every year we celebrate National Daiquiri Day he gave me an odd quizzical look. I’m pretty sure he thought I was crazy. I just sat there with a smile on my face thinking, “No sir, you’re the crazy one for not paying homage to a classic cocktail!”

Viva Mexico is a pop-up bar taking residency in the basement of Mayahuel Mezcal Bar, Commercial Street’s famous Mexican restaurant.  We invite you for an evening of pure Mexico life.

Viva Mexico is a tequila bar with a modern twist. The excellent tequila is served by London’s finest bartender, there are delicious Mexican Enchiladas to munch on, and the bar boasts a line-up of tequila master classes held weekly to make you fall (back) in love with the spirit.

 

Entertainment comes in the form of the vibrant Atlachinolli Dance Group who will perform at the pop-up event on various dates throughout the residency. And each Sunday the bar pays homage to Dia de los Muertos (Day of the Dead) where guests are encouraged to dress up (skulls optional) and dance all night to celebrate the lives of loved-ones past.
